Founder and president of LEAF (Leaders in Environmentally Accountable Foodservice), a Canadian, non-profit organization dedicated to reducing the environmental impact of the foodservice industry. LEAF develops criteria and certifies foodservice establishments that meet rigid environmental standards, based on independent, third-party audits.
